Founded in 2001 in San Diego, CA, Tajima has earned a reputation as one of the top Japanese restaurants in San Diego. Owner and entrepreneur, Sam Morikizono, takes pride in delivering an authentic taste of Japan at affordable prices. Tajima’s ramen is firm, fresh and springy – the result of being made with several types of flour and water with the perfect pH level. Ramen-making is a science in itself from noodle size to texture. Tajima selects only the finest ingredients and pairs the different noodles to compliment certain broths including a vegan option.
